Hey everyone! I’ve got something a little bit different for you today. I’ve never done a recipe on the blog before, but these tasted so good I just HAD to share them with you! These are vegan no-bake brownies!
To make 15 squares you will need:
235g pitted dates
110g almond butter
50g unsweetened cocoa
38g crushed pecans
Process the walnuts and dates in a food processor until finely ground.
Add the almond butter and process until well mixed.
Add the cocoa powder and pulse to mix well.
Transfer to a 20cm square baking tin lined with parchment. Use your fingers to press the mixture evenly into the tin. Once the mixture is firmly pressed into the tin, sprinkle the top evenly with the crushed pecans, pressing them into the top of the brownies.
Cover and refrigerate for at least 1 hour before cutting into squares.
These brownies were so quick and easy to make, they taste absolutely amazing and they’re vegan! What more could you ever want? They last for quite a while in the fridge as well so you don’t have to worry about them going off if you don’t eat them all in one go – which can be tempting!
