Hi guys! As we are now well into summer, I thought I would share with you something very close to my heart….
I am a massive lover of cocktails! Any flavour, any time. Morning, noon and night.
I created my own (using recipes off the web) and wanted to share them with you. So lets get into it!
HAVANA BEACH
Here’s what you need:
- 1 part white rum
- ginger ale
- 2 parts pineapple juice
- 1 lime
- ice cubes
All I did was shake the juice of 1 lime, 1 measure of rum and 2 measures of pineapple juice together in my cocktail shaker, pour into a glass over the ice, and top it up with ginger ale. It’s that simple, and tastes amazing!
PINA COLADA
(Here)
You will need:
- 1 part white rum
- 1 part Crème de coconut
- 2 parts pineapple juice
- ice
Now this one didn’t turn out as well as I would have liked. The instructions said to blend it all together, including the ice. Now I didn’t actually have any ice when I decided to do this, and I couldn’t find Crème de coconut either so I just went with coconut milk. It didn’t turn out too bad, it just separated a few times but that was easily fixable with the swirl of a straw!
COCONUT MOJITO
This is a little twist on the classic mojito we all know and love.
For this you will need:
- 1 part rum
- 2 parts coconut water
- 1 lime
- ginger ale
- mint leaves
- ice
To make this, shake together lime juice, rum, coconut water and mint leaves and pour over ice. Then just top it up with ginger ale. It’s that simple! Decorate with mint leaves for a bit of extra sass!
And there you have it, 3 very simple cocktails perfect for summer! Have a go at making these and let me know what you think, and if you have any tips let me know!
Until next time.

Pina coladas are my favorite summer drink. Actually I drink them all year long but that’s besides the point, you can’t go wrong with a classic!
