A week’s (almost) worth of dinner ideas!

Hi everyone. I don’t know about you, but I love seeing what people have for dinner! Call me sad, but I know there’s a lot of people out there that are the same. I’m not one of those people who come home from a long day at work and want to get busy in the kitchen, creating fun and exciting recipes – I enjoy simple and easy to make meals that don’t require much hassle!

Today I wanted to share my (almost) week in dinners in case anyone needed any inspiration!

Day 1

First up is a relatively new favourite of ours – sausage tray bake. For this we use potato, sweet potato, carrots, onion and garlic. We also sometimes put some frozen spinach on there as well. We then pop some sausages on top and cook for around 40 minutes, until it’s all nice and roasted. Our favourite sausages to use are the Richmond meat-free sausages. We serve this up with Yorkshire puddings and gravy.

Day 2

Next up is a stir fry. I really love a stir fry but I don’t have them as often as I would like. They are a really easy way of getting in some veg and they are really adaptable to your preferences. My favourite stir fry consists of the mushroom mix from Asda, along with some beansprouts, soy and garlic sauce and rice noodles. I serve this with some prawn crackers, and as Aaron doesn’t like it, this will last me for 3 meals. Sometimes I add some prawns in if I fancy it.

Day 3

We love pasta in this house! Today we’re having carbonara made with this Schwartz packet mix. Since I worked with them last year (veggie chicken casserole) I wanted to try out some other meals with their mixes and we’ve used this one a few times now. For this we use mushrooms, Quorn bacon and chicken. Aaron has real chicken and I have these Naked Glory chicken strips which are hands down the best veggie chicken I’ve tried yet. We serve it up with some garlic bread, of course!

Day 4

One of our favourite meals is fish finger sandwiches! We will normally use a nice tiger loaf for this, and we serve with home-made chips and either peas or mushy peas.

Day 5

On Sunday’s we normally have our version of a roast. This normally consists of the Quorn chicken and bacon lattices which are one of my favourite things on this earth! Aaron really likes them as well which is a bonus. We have these with home made roast potatoes, broccoli, carrots, Yorkshire puddings and gravy.

And there you have it! Nearly a week’s worth of meal ideas. Let me know some of your favourite meals to have for inspiration!

  1. This has given me some good ideas as I’ve been doing more cooking lately! I haven’t had a stirfry in ages. One of my favourite easy meals to make at the moment is roasted vegetables with rice and soy sauce. I usually roast whatever vegetables I happen to have, which is often onions, peppers, sweet potato, carrots and leeks. xx

  2. I like that these meals are ones where the ingredients are easy to source and so can be re-used for other meals. The bake sounds great and I always love a meal with sweet potatoes and sounds like one where the ingredients could be modified easily for a vegetarian one. Stir frys are great and always a good option to use leftover ingredients!

  3. This is such a great idea. I have never tried any of these recipes so it’s definitely giving me some ideas. My favorite is the sausage tray bake. I will try that and see how it goes. Thanks for the inspiration xxx

  4. These all look great. We LOVE making stirfy here, changing up the sauce or the veggies each time for a new taste. We just had stirfry the other day and now you have me wanting to make it again! lol

  5. Love these! Love a full roast but this version is such a great idea for a fast one!! Never thought about it and hadn’t heard of the lattice’s before so excited to try them 😀
